Being kind to one another is very important for the health of the mind, and thus for our heart, gastrointestinal tract and our general immune system. Let us not forget that being grateful comes for what we receive either by intent, gift or hard work comes with blessings and for that we should be thankful.

In these “modern” times some people think that because they go to the market and buy things they need this gives them the right to be served and attended without saying THANK YOU. This could not be further from the truth.

Look at my beautiful plants that I grow. I go to them everyday, I water them and feed them with appropriate fertilizers and compost. Then I say thank you to all of them for giving me beauty, for feeding me (I also grow tons of vegetables and fruit trees), for the wonderful smell coming from their petals and fruits. I thank the plants for the bees and butterflies that come to my yard every year because of them. We have a fantastic relantionshinship, my plants and I

Therefore, in every aspect of life is very important to say thank you. Whether you go to the market or you go to your backyard. Let us not forget kindness.

Oatmeal is one of my favorite choices of food to eat in the morning. Oatmeal contains vitamins, minerals and antioxidants that make me feel so much better through out the day. It also contains carbohydrates, proteins and soluble fiber which helps me not to feel bloated. Soluble fiber also reduces the levels of LDL or “bad” cholesterol by blocking its absorption into the bloodstream.

Other benefits: its main ingredient is manganese, which it has been proven scientifically to reduce the inflammation of the joints, improves bone health and it has been linked to lower incidents of seizures in patients with epilepsy.

If you want to enjoy your oatmeal in the morning you can add some banana, apple, no sugar, water and maybe a bit of low-fat milk, lots of cinnamon one day and the next I add vanilla, one day blue berries next day strawberries. I personally do not like to add pecans but some people can’t eat oatmeal without adding pecans. It’s your choice.

I prefer steel-cut oatmeal. Others prefer the rolled or irish oats. Whatever the kind if you like them, enjoy them!

I like my Hot Bacon Dressing salad without gluten. Gluten makes me feel bloated and I try to avoid it the most I can. Although there are some ways to flush it out of your intestines fast if you happen to ingest it in some meal. But this  would be the topic for another blog post. So let’s get to our homemade salad of the day:

Keep it in the jar

INGREDIENTS Nutrition

  • slices bacon, diced

  • 1cup finely chopped yellow onion

  • vegetable oil

  • 22 teaspoons cornstarch, mixed with

  • teaspoons water

  • 1cup white vinegar

  • 1cup water

  • 1cup sugar

  • salt and pepper

Enjoy it on Spinach or any other Salad!

DIRECTIONS:

Fry bacon til crisp. Remove the bacon with a slotted spoon and set aside. Add onion to bacon fat in pan and cook 5 minutes til onion is soft. With a slotted spoon, add onion to bacon. Pour bacon fat into a measuring cup and add vegetable oil to equal 1/2 cup. Add bacon fat to cornstarch mixture and reserve. Combine vinegar, water, sugar, salt and pepper in a small saucepan and heat to a boil. Add cornstarch mixture and cook til thickened (1-2 minutes). Remove from heat and add bacon and onion. Use while warm.
